What is Wagashi?
Wagashi is a general term for traditional Japanese confectionery. While its main ingredients are beans or glutinous rice with sugar, optional ingredients such as agar agar, sesame seeds, burdock, chestnuts, arrow roots, miso, and more may be added to
create varieties.
Nerikiri
Nerikiri is made by bean paste and sugar. Like mochi, it often has a filling. A small portion of glutinous rice is added to the outer layer as a bonding agent for shaping purpose.
Mochi
Mochi is made by glutinous rice with sugar. Often, a filling is added to create varieties. Filing choices include red beans, white beans, yuzu, kinkan (kumquat), kuri (chestnuts), and many more.
Yokan
Yokan is made by bean paste with sugar and agar agar. Additional ingredients such as yuzu, chestnut, kumquat, miso, and others may be added to create varieties.
A Sole Encounter
YoshiAn’s wagashi design changes with the season. Each design may be offered only a week or two as the nature and season change. While every wagashi is artisanally made, its uniqueness combines with the ever changing nature offers a true Sole Encounter experience that happens only once in a lifetime.
